Aroma: A medium and amply fragranced oil. The  strong hints of tomato plant and aromatic plant -thyme, rosemary- usual in our region give this EVOO its character and the olive leaf, fresh grass and soft-shell almond notes complete the experience.

Taste: Sweet on entry and once in one’s mouth, it raises memories of tomato plant, green banana and artichoke. Bitter and pungent in the right measure to enhance the roundness of our eco-EVOO

Culinary uses: Spice up green salads and tomato dishes or add to your serrano and medium cheese platters. Use it to cook oily fish, whitefish, meat and pasta dishes: this oil is good with almost everything.
